For the Fistweaver build, I won’t change anything until there are balance changes and buff to the Apex talent and it becomes a mandatory pick. Until then, I will keep running Apex less build. Personally, i will go for this one during my raid

I always do my Raid progress with that kind of playstyle, even though it’s usually not recommended for raid.

If you prefer a safer choice, since your roster will apparently decide who they keep based on the first raid, it might be better to follow the meta. Usually the Celestial / Rushing Jade Wind Kick build tends to perform better in raid, so I would recommend going with that one.
